PREPARAR SOBREBARRIGA CRIOLLA
INGREDIENTES
4 libras de Sobrebarriga,
3 tallos de cebolla larga completa
2 cervezas estilo Poker en Colombia es “amarga”.
2 libras de papa cortadas en mitades
1 ½ libra de yuca en pedazo.
2 cucharadas de tomillo, orégano y laurel molidos.

Cebollas cabezonas, peladas y cortada en cascos
4 dientes de ajo
3 tomates maduros, pelados y rallados grandes
½ pimentón rojo, cortado en tiritas (o también rallado)
1 ½ cucharada de salsa negra.
1 ají dulce picado
2 hojas de laurel
1 cucharada de tomillo
Sal, cominos, pimienta al gusto.

½ pimentón rojo, cortado en tiritas (o también rallado)
1 ½ cucharada de salsa negra.
1 ají dulce picado

En una
olla a presión cocina la sobrebarriga con la la cerveza y completando con agua
hasta cubrirla y agregando las hierbas y la cebolla larga.
Deje
pitar por dos veces.
En otra olla ponga a cocinar las papas y la yuca hasta que ablanden

En una sartén grande ponga a freír, los ajos, la cebolla cabezona y los pimentones y el ají dulce, luego agregue los tomates, deja un momento y luego agrega la salsa negra las hojas de laurel y el tomillo, la sal los cominos y la pimienta.
En esta salsa agregue la carne, plátano maduro, las papas y la yuca.
